After careful selection, the pancetta (pork belly) is sprinkled with a mixture of salt and spices according to our traditional recipe, before being left to rest at a cold temperature to let the salt and aromas distribute evenly through the meat. While being massaged by hand, the pancetta is sprinkled with mulled wine and a blend of spices warmed in the red wine, which infuse the product with fruity and winy notes. When cut, each slice features the characteristic alternating purplish red of the wine and the natural white of the pancetta.
